We chat with Candice about a beloved chocolate chip, walnut and oatmeal cookie recipe that was passed down generations in Canada.

 

Chocolate chip, walnut and oatmeal cookies recipe

Ingredients 

125g butter

½ cup brown sugar

2 eggs

1 ½ cups of whole wheat flour (or gluten free alternative flour)

2 cups oats

200g good quality dark chocolate chips (or milk)

1 ½ walnut halves, roughly chopped

1 tablespoon of vanilla essence or maple syrup

2 tablespoons cinnamon

Method

  • Preheat the oven to 180C before lining baking trays with unbleached baking paper.

  • Using an electric beater, mix in the butter and sugar together before adding in the egg.

  • Then sift the flour over the butter, sugar and egg mixture and combine well with a wooden spoon.

  • Make little balls with the cookie mix and place them on the baking paper-covered trays.

  • Use a fork to lightly press down on the cookie mixture to flatten them.

  • Depending on your oven, try 20-25 mins (and check until golden brown).

  • Remove trays and let cookies cool.

  • Enjoy with a cool glass of milk.
